GF Almond Flour Cookies

Hi all! I recently tested this recipe for gluten-free chocolate chip cookies. They have a shaved coconut texture from the almond flour, which is great. If you sift the flour, or grind it very finely yourself, this texture will definitely be reduced. They actually have a bit of a coconut flavor too, deviating from the traditional chocolate chip cookie. The dough is very moist and retains that after baking. I would recommend working fast, or using a scoop to shape your cookies, so the chocolate chips don’t melt. Overall, another success!
