Let me start off by saying this recipe is incredible! It is the perfect quintessential fall-winter treat. Nutmeg, cinnamon, clove, and apple scents fill your home and your belly too! You need only two bowls for the recipe, about 35 minutes of prep time and under 30 minutes of baking time to make your own apple spice cake. The recipe was taken from America’s Test Kitchen: The How Can It Be Gluten Free Cookbook (GF Apple Snack Cake).
It was leavened really nicely, and looking at the inside, it has a good cake crumb. There were a few spots where some dry ingredients clumbed together, so maybe it would help to sift the dry mix before mixing in the wet ingredients. The cake was super moist even though I probably overbaked it by a minute or two. The bottom got quite dark, but did not have an unpleasant, burnt flavor. I would just use a light colored cake pan next time instead of a dark non-stick. I will definitely have to make this cake again and try decorating it. Happy holiday cake making!
